It balances perfectly the Intensity of aroma and bitterness of Koroneiki with the fruitiness and distinct odour of Manaki.  This combination delivers a perfect medium intensity extra virgin olive oil.

Manaki

Manaki is the common variety of north-eastern Peloponnese. This olive variety ripens later, its harvest begins from mid November to early January. The fruit has a medium size in an oval shape. The weight varies between 2.2 and 2.9 grams. What distinguishes the Manaki tree is that it also thrives at high altitudes, where other varieties do not normally yield. It has a high resistance to strong winds and cold.

The taste of olive oil that comes from this fruit is milder and its strong aroma reminds ripe fruits like apple, tomatoes and sometimes almonds. Extremely tasteful it is the best choice for salads and has fanatic friends. This variety is used for the production of olive oil of excellent quality but also inlaid as whole fruit at the dining table. Manaki is almost exclusively found in the Peloponnese.


Koroneiki.

Koroneiki is the most popular type of olive variety in Greece and is used exclusively for oil production. It is the least demanding in terms of temperature, moisture, soil, resistant to the dry heat conditions of Greece and produces high quality oil with excellent aroma and strong taste. It has a high level of polyphenols and delivers EVOOs with a robust fruity nose, with a touch of balancing bitterness and a strong, peppery finish. Typical flavours include grass and artichokes.

As a tree it has moderate growth and usually reaches a height of 5-7 meters, the leaves are dark green/grey, have the shape of a sword and a length of 5.5 cm with a width of 1 cm. The fruit is rather small with an average weight of 1.3 g, one side is slightly curved and has a small, characteristic nipple. 

Depending on the circumstances, the trees can consistently deliver fruit and high yields. They are resistant to dry heat, but under extreme droughts the yield reduction, which takes place every two years, is many times higher. If irrigation is possible, however, the trees produce a relatively stable production each year.

It is an early ripening variety that begins in early October. At the same time, it needs appropriate care in cold winters to ensure a satisfactory flowering period. Their properties make them particularly suitable for the rocky southern and warmer regions of the country (Peloponnese & Crete). 

It is also believed that it comes from the Koroni region of Messinia in Peloponnese, from which it got its name.
